Well, that's how *some* people sing
it :) School is
back in session in most areas, and a good breakfast
is what everyone needs to get charged up for the
long day ahead of them. Here are a few breakfasts
that are not only nutrional, but taste good, too!
Crumb-Topped French Toast
1/2 cup skim milk
1/2 teaspoon vanilla extract
1/4 teaspoon salt
2 eggs
1 cup cornflake crumbs
8 (1 ounce) diagonally-cut slices French bread (about 1
inch thick)
1/4 cup margarine, melted
Preheat oven to 450 degrees. Combine the first four
ingredients in a medium bowl; stir well with a wire
whisk. Place cornflake crumbs in a shallow dish. Dip
bread slices into milk mixture, then dredge in cornflake
crumbs. Place bread slices on a baking sheet, and drizzle
with margarine. Bake at 450 degrees for 15 minutes or
until golden brown. Makes 8 servings
Serve this great french toast with warmed syrump, bacon
roll-ups (roll bacon, skewer with toothpicks and broil),
and sectioned oranges sprinkled with a little cinnamon
sugar.
Rise'n Shine Chicken Burritos
8 chicken breast tenders
2 eggs
1 Tablespoon milk
1/4 teaspoon salt
dash of pepper (optional)
4 (8 - 10 inch) flour tortillas
1 Tablespoon butter or margarine
1/3 cup shredded cheddar or cheese of your choice
Picante sauce (optional)
Cut chicken into bite-sized pieces and set aside. Put
eggs, milk, salt and pepper in a bowl and scramble with a
fork; set aside. In a skillet over medium-high heat, melt
the margarine or butter. Add the chicken pieces and cook
2 to 3 minutes; chicken should no longer be pink inside.
Pour the egg mixture over the chicken and cook and
additional 1 to 2 minutes, stirring ocassionally until
the eggs are set. Remove from heat. Spoon the mixture
into warm tortilla wraps (see package directions for
warming), top with cheese and picante (if desired), roll
and serve. Add a side of fresh fruit or a glass of juice
to round out the meal. Makes 4 servings
This particular dish is very easy for children to help
make. Don't forget to add any veggies you might enjoy
like onions or mushrooms. These should go in with the
chicken.
